Ingredients
  

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter melted
  • 1 1/2 cups diced apples Granny Smith or Honeycrisp recommended
  • Optional glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Dice apples into 1/4- to 1/2-inch cubes; set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a separate bowl, beat eggs until foamy. Add milk, vanilla, and melted butter; whisk until combined.
  • Pour wet ingredients into dry ingredients and gently fold until just combined. Do not overmix.
  • Fold in diced apples.
  • Scoop batter using a 1/4-cup measure onto the prepared baking sheet, leaving space between each.
  • Bake for 14–16 minutes or until golden brown and a toothpick comes out clean.
  • Let cool slightly before glazing. For glaze, whisk powdered sugar, milk, and vanilla until smooth and drizzle over warm fritters.

Notes

Use fresh baking powder to ensure your fritters rise properly.
Keep the apple peel on for extra texture and fiber.
Store at room temperature for 2 days or freeze for up to 1 month.
To reheat, warm in a 350°F oven for 3–4 minutes.
For variations, add chopped nuts, dried cranberries, or swap in pears.
