Ingredients
  

Chicken and Breading

  • 1.5 lbs boneless skinless chicken breasts cut uniformly into 1-inch pieces
  • 2 large eggs beaten well
  • salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • oil for frying use a high smoke point oil

Sesame Sauce

  • 1 teaspoon vegetable oil
  • 1 teaspoon fresh garlic minced
  • 1/4 cup honey
  • 1/4 cup soy sauce reduced sodium is highly preferred
  • 2 tablespoons ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons cornstarch

Garnish

  • 2 tablespoons sesame seeds
  • 2 tablespoons green onions sliced

Instructions
 

  • Place your two beaten eggs into a medium-sized mixing bowl. Season the eggs generously with your preferred salt and black pepper.
  • In a separate shallow dish, combine the flour and the cornstarch. Mix these dry ingredients thoroughly to ensure they are evenly distributed.
  • Dip each piece of chicken into the seasoned egg mixture, letting excess liquid drip off. Then, toss the wet chicken into the dry flour mixture until completely coated on all sides.
  • Heat your chosen frying oil in a heavy-bottomed, deep pan until it reaches exactly 350 degrees Fahrenheit.
  • Carefully drop the coated chicken pieces into the hot oil in small, manageable batches. Fry for about five minutes until perfectly cooked through and rich golden brown. Remove and let drain on a wire rack or paper towels.
  • In a medium bowl, whisk the honey, soy sauce, ketchup, brown sugar, rice vinegar, toasted sesame oil, and two teaspoons of cornstarch until completely smooth and lump-free.
  • Heat one teaspoon of vegetable oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until highly fragrant.
  • Pour the prepared sauce mixture into the skillet. Bring to a gentle simmer and let it cook undisturbed for 3 to 4 minutes until it thickens beautifully and becomes glossy. Turn off the heat.
  • Carefully add the fried, crispy chicken into the warm skillet. Toss everything together gently to ensure every piece is fully coated in the sauce.
  • Sprinkle with toasted sesame seeds and sliced green onions. Serve immediately.

Notes

Storage Tips: Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, avoid the microwave. Place the chicken on a metal baking sheet in a 350-degree oven for about ten minutes to revive the crunch.
