Prepare the Chicken
Cut chicken into 1-inch cubes.
In a shallow bowl, mix flour, garlic powder, paprika, salt, and pepper.
Beat the egg in a separate bowl.
Dip each chicken piece into the egg, then dredge in the flour mixture. Let coated pieces rest for 2 minutes.
Cook the Chicken
Heat olive oil in a large skillet over medium-high heat.
Fry chicken pieces in batches, 3–4 minutes per side, until golden brown and cooked through.
Transfer to a paper towel-lined plate to drain.
Make the Sauce
In the same skillet, add honey, soy sauce, garlic, vinegar, ginger, and red pepper flakes.
Stir and bring to a simmer.
(Optional) Mix cornstarch with cold water and whisk into the sauce to thicken, simmering for 2–3 minutes.
Combine & Serve
Add cooked chicken back to the skillet. Toss until all pieces are coated in the sauce.
Cook for another 1–2 minutes.
Garnish with green onions and sesame seeds if desired.
