Marinate the Chicken:
In a medium bowl, whisk honey, 2 tablespoons lime juice, lime zest, minced garlic, salt, and pepper.
Coat chicken breasts in marinade.
Marinate at least 15 minutes (up to 30 for more flavor).
Cook the Chicken:
Heat a grill pan or skillet over medium-high heat.
Remove chicken from marinade, reserving marinade.
Cook chicken 6–7 minutes per side, until fully cooked (165°F internal).
Let rest 5 minutes, then slice.
Prepare the Cilantro Lime Rice:
In a bowl, combine cooked rice, chopped cilantro, 1 tablespoon lime juice, and salt. Mix well.
Prepare the Avocado:
Slice avocados.
Toss gently with 1 tablespoon lime juice, salt, and pepper.
Assemble the Stack:
On each plate, layer cilantro lime rice as the base.
Top with sliced chicken and avocado.
Drizzle with any reserved marinade.
