  • 1 pound lean ground beef 90/10 or 93/7 works best
  • 1 15-ounce can sloppy joe sauce (any brand)
  • 1 10-count can refrigerated biscuits (regular size, not jumbo or Grands)
  • 1/2 cup shredded cheddar cheese sharp cheddar recommended

Instructions
 

  • Preheat and Prepare
  • Preheat your oven to 375°F (190°C). Grease 10 cups of a muffin tin thoroughly with cooking spray or butter to prevent sticking.
  • Brown the Ground Beef
  • Place a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook for 5-7 minutes, stirring frequently, until no pink remains. Drain any excess grease from the pan.
  • Add the Sloppy Joe Sauce
  • Pour the entire can of sloppy joe sauce into the skillet with the browned beef. Stir well to combine. Let the mixture simmer over medium heat for 2-3 minutes until the sauce thickens slightly and coats the beef.
  • Form the Biscuit Cups
  • Open the can of refrigerated biscuits and separate them. Flatten each biscuit gently between your palms into a 4-5 inch disk. Press each flattened biscuit into a greased muffin cup, pushing it down and up the sides to form a cup shape.
  • Fill the Cups
  • Spoon the sloppy joe mixture evenly among the 10 biscuit cups, using about 2-3 tablespoons per cup. Fill almost to the top, leaving the biscuit edges visible.
  • Add the Cheese
  • Sprinkle the shredded cheddar cheese evenly over each filled cup, distributing it so every cup gets a generous amount.
  • Bake
  • Place the muffin tin in the preheated oven and bake for 12-15 minutes until the biscuits are golden brown and the cheese is melted and bubbly.
  • Cool and Serve
  • Remove from the oven and let the cups cool in the pan for 5 minutes. Run a butter knife around the edges if needed, then gently lift each cup out. Serve warm.
