  • 1/2 cup white sugar
  • 1 1/2 cups all-purpose flour unbleached preferred
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold butter 1 stick, cubed
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • For the Strawberry Filling:
  • 2 cups fresh strawberries chopped
  • 1/3 cup white sugar
  • 2 teaspoons cornstarch

Instructions

  • Prepare Oven & Pan:
  • Preheat oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
  • Make Crumb Mixture:
  • In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.

  • Add cold, cubed butter and cut it into the mixture using a pastry cutter or two forks until crumbly with some pea-sized pieces.

  • Assemble Bars:
  • Press half of the crumb mixture firmly into the prepared pan to form the crust.
  • Spread strawberry filling evenly over the crust.
  • Sprinkle remaining crumb mixture on top, allowing some strawberries to peek through.

  • Cool & Cut:
  • Let cool completely in the pan before lifting out and slicing into bars.

Notes

Use Cold Butter: Keep butter chilled until ready to use for best crumb texture.
Strawberry Tip: Medium-sized, ripe strawberries provide the best flavor and texture. If using frozen berries, thaw and drain well before using.
Make-Ahead Friendly: These bars taste even better the next day and freeze well for up to 3 months.
Variations: Add lemon zest to the crumb mixture, reduce sugar if strawberries are sweet, or try a mixed berry version.
Double It: Double all ingredients for a 9x13-inch pan and increase bake time to 50–55 minutes.
