Ingredients
  

  • 1.5 cups cooked chickpeas drained and rinsed well
  • 1/3 cup smooth tahini use high-quality, runny brand
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice plus more to taste
  • 1 garlic clove freshly peeled
  • 0.5 tsp sea salt adjust to preference
  • 5 tbsp water add more as needed

Instructions
 

  • Place chickpeas, tahini, olive oil, lemon juice, garlic, and sea salt into your blender or food processor.
  • Begin blending on a low speed to incorporate the ingredients.
  • As the machine runs, slowly drizzle in the water, one tablespoon at a time, until the mixture is uniform, pale, and smooth.
  • Taste and adjust lemon juice or salt if preferred, then transfer to a bowl to serve.

Notes

For an even smoother texture, try removing the outer skins of the chickpeas before blending. Leftovers store well in an airtight container for several days.
