Zucchini Pizza Bites

Zucchini Pizza Bites
- 2 large zucchini cut into 1/4-inch thick rounds
- nonstick cooking spray as needed
- kosher salt to taste
- cracked black pepper to taste
- 1/4 cup marinara sauce
- 1/2 cup part-skim mozzarella shredded
- 1/4 cup mini pepperoni pieces optional
- Italian seasoning for sprinkling
Slice the zucchini into even 1/4-inch thick rounds. Leave the skin intact.
Arrange the zucchini rounds on a clean tray. Lightly coat both sides with nonstick cooking spray, then season with kosher salt and cracked pepper.
Heat a grill pan over medium-high heat or turn on the oven broiler. Pre-cook the zucchini rounds for about 2 minutes per side until slightly firm.
Transfer the pre-cooked zucchini rounds to a lined baking sheet. Spoon a small amount of marinara sauce onto each round.
Top each zucchini round with shredded part-skim mozzarella and a few mini pepperoni pieces.
Place the baking sheet under the hot broiler for 1 to 3 minutes, watching closely, until the cheese is melted, bubbly, and lightly golden.
Carefully remove the zucchini pizza bites from the oven and sprinkle with Italian seasoning. Serve immediately while hot.
For best results, do not skip the salting and pre-cooking steps because zucchini naturally contains a lot of moisture. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a toaster oven. Customize the toppings with black olives, diced bell peppers, or cheddar cheese.
